Sweet-Soy Dipping Sauce

INGREDIENTS

1/4 c Mirin
3/4 c Defatted chicken or fish stock
1/4 c Dark soy sauce
2 tb Finely slivered ginger
2 tb Finely slivered lemon zest
2 ts Sugar; or to taste

INSTRUCTIONS

Combine all ingredients and stir to dissolve sugar. Allow to sit for at
least 2 hours for flavors to develop. Store covered in refrigerator for up
to 2 weeks.
