Swiss Chard Topped With Marinated Portobello Mushrooms

INGREDIENTS

2 Portobello Mushrooms; About 5 Oz Each
4 tb Soy Sauce; Low Sodium, Or Tamari Soy Sauce
2 tb Vegetarian Worcestershire Sauce
2 tb Cider Vinegar
1/2 ts Sesame Oil; Note 1
4 ts Minced Shallots
2 ts Dijon Mustard; Country Style
2 bn Red Swiss Chard
1 ts Olive Oil; Plus
1 ts Olive Oil; Note 2
4 ts Minced Garlic

INSTRUCTIONS

Glen's Note: These three recipes were posted as a meal by Reggie. Lemon
Rosemary Chicken, Garlic Lover's Potatoes, Swiss Chard Topped W/ Marinated
Portobello Mushrooms.
This was a very good meal!! If you eat the Swiss Chard as part of a meal it
will fall into a low enough CFF percentage.
Note 1: Original recipe used 2 tsp sesame oil
Note 2: Original recipe used an extra 1/2 tsp olive oil
Dairy Free Vegetarian
Can use other greens such as spinach, beet greens or kale.
Wipe mushroom caps; remove stems. In shallow bowl, whisk 2 Tbsp tamari or
soy sauce, Worcestershire sauce, vinegar, sesame oil, shallots and mustard.
Add mushroom caps and marinate 15 min, turning occasionally.
Meanwhile, remove stems from chard and coarsely chop.
In large skillet, heat 1 tsp olive oil over med-high heat. Add garlic and
cook, stirring, 1 min. Add chard and remaining 2 Tbsp tamari or soy sauce.
Cover and cook until wilted, 4 min. Uncover and set aside.
Wipe out pan. Heat remaining 1 tsp oil over med-high heat. Remove mushrooms
from marinade; reserve marinade. Add mushrooms and cook until tender, 4 min
per side.
To serve, reheat chard and divide among plates. Cut mushrooms into 1/2"
thick slices. Arrange sliced mushrooms over chard and drizzle with
remaining marinade if desired.
Serves This has incredible flavor and was very quick and easy to put
together.
