Swiss Steak in Tomato Gravy

INGREDIENTS

18 lb Ground beef
1 ga Bread crumbs
1 qt Diced onions
1/3 c Salt
2 ts Pepper
1 qt Milk
1 c Drippings from meat
2 c Flour
1 tb Browning sauce
1 tb Salt
1 Tap pepper
1 cn (#10) tomato sauce

INSTRUCTIONS

TOMATO GRAVY
1. combine ground beef, bread crumbs, onion, salt, pepper and milk.
2. shape into 2 1/1 oz. portion patties unsing #10 scoop. or make 2 rows of
meat mixture in a 2 in pan.
3. bake at 325 degrees until brown.
4. place in steam table pan and cover with gravy.
Tomato Gravy:
1. combine drippings and flour. Brown slightly
2. add bottled browning sauce, salt peper and tomato sauce
3. Blend well and pour over patties
1 serving provides 2 oz cooked meat
