INGREDIENTS

1 c Bulgur wheat
2 c Water; boiling
2 Tomatoes; seeded, finely diced
1 bn Scallions; sliced
3 ts Fresh mint leaves; chopped
2 c Fresh parsley; finely chopped
1/2 c Lemon juice
1/4 c Olive Oil
Black Pepper; freshly ground, to taste

INSTRUCTIONS

Cost: $- Preparation Time: 15 minutes
Difficulty Level: 2 Servings: 8 as a side dish
1. Place uncooked bulgur in a bowl; pour boiling water over it and let it
soak 1 hour (stir occasionally).
2. Drain well in a fine strainer.
3. Return bulgur to the bowl and add all other ingredients; mix well.
4. Chill for 2 hours.

protein; 7g fat; 179 calories; 0mg Cholesterol; 9mg Sodium
