Let us thank God heartily as often as we pray that we have His Spirit in us to teach us to pray. Thanksgiving will draw our hearts out to God and keep us engaged with Him; it will take our attention from ourselves and give the Spirit room in our hearts.

Tamarind Chicken

INGREDIENTS

1 1/2 kg Chicken thighs
185 g Tamarind pulp
200 ml Hot water
3 tb Ground coriander
2 tb Sweet soy
5 tb Sugar
2 ts Salt
4 tb Peanut oil

INSTRUCTIONS

Soak tamarind in water and discard seeds.
Soak until all the tamarind is dissolved.
Roast the coriander until it becomes fragrant and darkens in colour.
Then add the soy, sugar, tamarind water and salt. Stir Well.
Add the chicken and marinate for a couple hours.
Heat the peanut oil and cook the chicken until just cooked.
Serve with steamed rice, fresh coriander, diced tomato and a squeeze of
lime juice.
