Three Cheese Potato Fluff

INGREDIENTS

1/2 Bag Ore-Ida mashed potatoes, prepared
3/4 c Milk
1/2 c Swiss cheese, shredded
1/4 c Parmesan cheese
3/4 c Sharp cheddar cheese, shredded
3 lg Scallions
1/4 c Onion, chopped
1 ts Salt
1/2 ts Freshly ground pepper
3 lg Eggs, separated

INSTRUCTIONS

Preheat oven to 375°. Add milk to the prepared potatoes, cheeses,
scallions, onions, salt and pepper and egg yolks. Mix together thoroughly
until well blended. In a small bowl with mixer on high speed, whip the egg
whites until stiff peak form. Gently fold beaten egg whites into mashed
potato mixture. Spoon the mixture into a greased 3" deep casserole dish.
Bake about 50 minutes, or until puffed and golden.
