Tofu Balls

INGREDIENTS

1 sm Onion
3 Cloves garlic; or powdered garlic
1 bn Parsley
1 lb Firm tofu
3 tb Oil
3/4 c Bread crumbs; or cornflake crumbs
1 1/2 c Flour
1 1/2 ts Lemon zest
Salt
Pepper

INSTRUCTIONS

Prehead the oven to 400F
Dice the onion, chop the garlic, chop the parsley. Mash the tofu and mix
with the chopped onion, bread crumbs, flour, chopped garlic (or garlic
powder) parsley and lemon zest. Add more bread crumbs if it won't hold it's
shape.
Grease a cookie sheet. Shape the mixture into ping pong ball sized balls
and bake for 40 minutes.
