Tofu "egg" Salad

INGREDIENTS

6 oz Lite firm tofu
2 T Light mayonnaise, or vegan
mayo
1 t Curry powder
2 t Nutritional yeast
3 T Finely chopped spinach
1 t Minced green onion
1/4 t Freshly ground black pepper
1 t Finely chopped fresh parsley
1/2 t Capers, optional

INSTRUCTIONS

Place tofu in a small bowl and mash with a fork to create small
chunks. Add remaining ingredients and stir. Chill for 1 to 2 hours or
more to allow flavors to develop.  Serving suggestions: Toast 2 slices
of multigrain bread, top with 2  ounces of Tofu "Egg" Salad, slices of
tomato, onion, lettuce, etc. OR  serve on hamburger or sandwich buns.
