Tomato And Avocado Pinwheel Salad

INGREDIENTS

4 Tomatoes, cut into wedges
2 Avocadoes, peeled & pitted
cut into thin wedges
2 T Lime juice
1/2 c Balsamic vinegar
1 Garlic clove, minced
3 T Onion, grated
1 T Sweetener
1/4 c Olive oil

INSTRUCTIONS

Sprinkle tomato & avocado wedges with lime juice.  On a serving
platter, arrange laternate slices of tomato & aovcado in a pinwheel
fashion. VINAIGRETTE: Whisk together vinegar, garlic, salt, onion &
sweetener. Gradually pour in the oil & whisk to blend. Pour this
vinaigrette over the wedges. Serve.
