Tomato And Bacon Chowder

INGREDIENTS

1/2 lb Bacon, diced
1 qt Stewed tomatoes
1 qt Chicken broth, divided
1/4 c Butter
1 Onion, diced
1/4 c Flour
2 c Warm milk
Shredded lettuce, to garnish
Croutons, to garnish

INSTRUCTIONS

Fry bacon and drain well; set frying pan aside.  Put bacon into a
large kettle; add tomatoes and three-fourths of the chicken. Deglaze
frying pan wit remaining chicken broth; add mixture to kettle. In
another pan, melt butter and saute onions until tender, but not  brown.
Add flour and stir well.  Add to tomato mixture. Slowly stir  warm milk
into tomato mixture. Heat well.  Before serving, top each  bowl with
lettuce and croutons. Serves 8 to 10  Typed in MMFormat by
