Tomato And Basil Pesto

INGREDIENTS

1 md Vine-ripened tomato
1/2 c Loosely packed basil leaves
2 tb Chopped Italian parsley
1/2 ts Minced garlic
1 tb Balsamic vinegar
1 ts Lemon juice
Salt
Freshly ground black pepper

INSTRUCTIONS

Core the tomato and cut in half. Grill over very hot coals for only a few
minutes to take on some color and flavor. Remove from the grill and set
aside to cool.
Place the basil, parsley, and garlic in a food processor. Process until
smooth. Add the tomato, vinegar and lemon juice and process. Season with
salt and pepper to taste.
