Tomato-Feta Green Beans

INGREDIENTS

1/4 c Pine nuts*
2 16 ounce packages frozen French-style green beans, thawed
2 Garlic cloves, minced
2 ts Dried Italian seasoning
1 tb Olive oil
4 Plum tomatoes, chopped
2 tb Lemon juice
1 ts Salt
1/2 ts Pepper
1 4 ounce package crumbled feta cheese

INSTRUCTIONS

Bake pine nuts in a shallow pan at 350°F for 6 to 8 minutes or until
toasted.  Set aside.
Drain green beans well, pressing between layers of paper towels.
Saute garlic and Italian seasoning in hot oil in a large skillet over
medium heat 1 minute; add green beans, and saute 5 to 7 minutes. Stir in
tomato, and cook, stirring constantly, 2 minutes or until thoroughly
heated.  Stir in lemon juice, salt, and pepper.  Sprinkle with cheese and
pine nuts.  Yield: 6 servings  * 1/4 cup toasted walnuts may be substituted
