Tortellini Stew

INGREDIENTS

4 cn Chicken broth; nonfat
2 cn Tomato juice; low sodium, (48 oz.)
2 c Cauliflower florets
2 c Broccoli florets
8 Plum tomatoes; cut into 1/2" slices
8 oz Fresh mushrooms
1 c Frozen pearl onions
32 oz Tortellini; cheese-filled
2 Cloves garlic; minced
1/2 ts Oregano
4 c Spinach leaves; shredded
1/2 c Fresh basil leaves

INSTRUCTIONS

In 6 qt. Nesco, or large saucepan, combine broth and tomato juice. Bring to
a boil; simmer for 5 mins. Add cauliflower. Stir, cover and cook for 5
mins. Add remaining ingredients except spinach and basil. Stir, cover and
cook for 30 mins. Add spinach and basil. Stir, cover and cook for 15 mins.
Serves 8 at 350 calories/5 grams fat.
