Tropical Fruit Medley With Anise

INGREDIENTS

2/3 c Unsweetened apple juice
2 t Cornstarch
1/2 t Anise seeds, crushed
1 c Cantaloupe balls
1 c Seedless red grapes
1 c Peeled coarsely chopped ripe
fresh papaya
1 c Peeled coarsely chopped ripe
fresh mango
1 t Brown sugar
Fresh mint sprigs
optional

INSTRUCTIONS

Combine first 3 ingredients in a small saucepan; stir with a wire
whisk until blended.  Bring to a boil over medium-high heat, and cook 1
minute, stirring  constantly. Remove from heat, and let cool.  Combine
cantaloupe and next 4 ingredients in a shallow bowl, and add  apple
juice mixture, tossing gently. Cover and chill for 1 hour.  Yield: 4
servings (serving size: 1 cup).  Per serving: 88 Calories; 0g Fat (4%
calories from fat); 1g Protein;  23g Carbohydrate; 0mg Cholesterol; 6mg
Sodium  Serving Ideas : Garnish with fresh mint sprigs, if desired.
