Turkey And Apricot Bake

INGREDIENTS

1 454 gram pac turkey stir-fry; (1lb)
25 g Plain flour; (1oz)
Freshly ground black pepper
3 tb Olive oil with a hint of garlic
1 bn Salad onions; chopped
150 g Ready-to-eat dried apricots; (5oz)
300 ml Semi-skimmed milk; (1/2 pint)
125 g Half-fat matured cheese; grated (4oz)
40 g Fresh wholemeal breadcrumbs; (11/2oz)
2 tb Freshly chopped parsley

INSTRUCTIONS

1. Preheat the oven to 190 C, 375 F, Gas Mark 5.
2. Coat the turkey strips in seasoned flour.
3. Heat the oil in a saucepan, preferably non-stick, and cook the turkey
for 2-3 minutes, stirring continually, until sealed.
4. Stir in the onions and apricots, then add the milk.
5. Cook for a further 2-3 minutes, stirring until thickened and smooth,
then stir in 75g (3oz) of cheese and transfer the mixture to an ovenproof
dish.
6. Mix together the breadcrumbs, parsley and remaining cheese and sprinkle
over the top.
7. Bake in the preheated oven for 15 minutes. For an extra crispy topping,
place under a preheated hot grill for 1-2 minutes.
8. Serve immediately with mangetout and baby carrots.
