Vegetable Croquettes

INGREDIENTS

1 lb Broccoli; chopped
1/4 lb Green beans; chopped
2 Carrots; chopped
1 Onion; finely chopped
2 Cloves garlic; minced
2 c Fresh bread crumbs
1/4 c Unbleached all-purpose flour
2 tb Soy milk
1 ts Dried basil
Salt and pepper; to taste
1 tb Vegetable oil; up to 2T as needed

INSTRUCTIONS

Makes 8 patties.
Steam the broccoli, beans, and carrots until tender. Process the steamed
vegetables in a food processor with the onion and garlic. Puree. Mix in the
bread crumbs and flour. Stir in the soymilk and basil, and season with salt
and pepper. Refrigerate the mixture for at least one hour.
Form the mixture into patties. Heat the oil in a large frying pan and saute
the patties on each side until they are browned. Drain them on paper
towels.
Serve with salsa or ketchup.
