INGREDIENTS

100 g Tofu; (bean curd)
1 md Carrot; diced
1 lg Onion; chopped
75 g Green beans; trimmed and chopped
2 ts Tomato puree
1 ts Salt
2 Bay leaves
1 100 gram sho grain rice
4 Mushrooms; sliced
75 g Sweetcorn
1 lg Sweet potato; diced
1 ts Turmeric
40 ml Olive oil
500 ml Hot water

INSTRUCTIONS

Saut. the tofu in a pan and set aside.
Heat the olive oil, and add the chopped onions and the bay leaves and
saut.. Add the rice and mix together. Then add the salt, turmeric and
tomato puree.
Add the water and bring to the boil, then add all the cut vegetables and
the tofu and cook on a low heat until the water is absorbed.
