INGREDIENTS

2 c Black eyed peas; soaked & cooked
1 lg Onion
4 tb Oil
1 ts Chili powder
1 ts Coriander; ground
1 ts Thyme; dried
3 Tomatoes; chopped
1 ts Sugar Salt

INSTRUCTIONS

1. First cut the onion in half. Grate 1 half then slice the rest finely. 2.
Warm the oil in a pan and soften the onion slcies in it. 3. Meanwhile,
combine the grated onion, chili, coriander and thyme in a bowl with the
tomatoes and add this to the cooked onion slices. Contniue to cook the
mixture gently for 10-15 minutes, stirring constantly. 4. After this put in
the cooked black eyed peas, mash them a little and then add sugar and salt.
Mix everything well and cook for 5-10 minutes to heat all the ingredients
before serving with salad and rice or fufu (cassava mash).
