Warm Italian Beef and Spinach Salad

INGREDIENTS

1/2 c Sour cream
2 tb Skim milk
1 tb Prepared horseradish
1 tb Country-style dijon mustard
1/2 lb Deli roast beef, cut in 1/8" strips
1/2 c Sliced red onion, separated into rings
2 Roma tomatoes, sliced 1/4" thick
6 c Torn fresh spinach

INSTRUCTIONS

DRESSING
SALAD
In medium bowl stir together all dressing ingredients; set aside.
Spray 10- to 12-inch nonstick skillet with vegetable cooking spray, add
beef and onions. Cook over medium heat, stirring occasionally, until onions
begin to soften and beef is hot (about 2 to 3 minutes).
In a large bowl toss together beef mixture, tomatoes, spinach, and
dressing. If desired, serve with croutons or garlic toast.
