God is love. He loves us with an everlasting love that cannot be shaken or diminished. His love is unconditional and sacrificial, and it is the greatest love we will ever know. We can rest in His love, knowing that we are fully accepted and cherished by the Creator of the universe.

Warm Spinach and Macintosh Apple Salad with Bacon (Mf)

INGREDIENTS

4 sl (thick) bacon
1 sm Red onion, sliced
2 tb Cider vinegar
2 ts Dijon mustard
1 ts Sugar
Salt and pepper
10 oz Fresh spinach, rinsed, patted dry & torn in bite-size pieces
1 Macintosh apple, cored & sliced thin

INSTRUCTIONS

In a skillet set over moderate heat cook the bacon until it is crisp.
Transfer the bacon to a plate lined with paper towel and let it drain. Pour
off all but 2 tablespoons fat from the skillet.
Add the onion to the skillet and cook it, stirring occasionally, for 3
minutes, or until it is wilted. Add the vinegar, mustard, sugar and salt
and pepper to taste and bring the mixture to a boil, stirring. In a serving
bowl combine the spinach and apple. Add the hot dressing and toss to
combine and serve.
