If thankfulness does not move us to serve God, then we do not truly understand who our God is and what He has done in our behalf. Without gratitude for Christ’s sacrificial love, our duty will become nothing more than drudgery and our God nothing more than a dissatisfied boss.

Western Beans and Rice

Grains Bean, Pasta/rice 6 Servings

INGREDIENTS

1 c Long-grain rice; uncooked
1/2 ts Olive oil
1 c Onions; chopped
1 c Celery; sliced
1 Clove garlic; minced
15 oz Pinto beans; drained and washed
8 oz No-salt-added tomato sauce
1/2 c Water
1 tb Ketchup
1 ts Chili powder
1/4 ts Hot pepper sauce

INSTRUCTIONS

Prepare rice according to package directions. In a skillet, heat oil over
medium heat. Add onions, and celery. Cook and stir until crisp-tender. Add
garlic, pinto beans, tomato sauce, water, ketchup, chili powder, and hot
pepper sauce. Heat thoroughly, stirring occasionally. Serve over hot rice.
