White Chocolate Cheesecake

INGREDIENTS

Crust
20 Pieces chocolate wafer cookies
2 tb Butter; melted
Filling
1 Envelope unflavored gelatin
1/2 c Water
1/2 c Sugar
8 oz Cream cheese
1 c Sour cream
6 oz White chocolate; melted
1 c Whipping cream
1/2 ts Vanilla

INSTRUCTIONS

Combine crust ingredients and press in bottom of springform pan. Set aside.
In saucepan, combine gelatin and water, stand 1 minute. Add sugar and heat
until dissolved. Beat cream cheese and sour cream, add white chocolate,
gelatin, whipping cream and vanilla. Beat until smooth. Pour into crust
lined pan, cover and refrigerate 3 hours until firm.
