Wild Rice Pilaf

INGREDIENTS

1 c Wild rice; rinsed
8 oz Snow peas or green beans
Trimmed and cut diagonally into
1 1/2 inch p
2 c Orzo
2 lg Yellow bell peppers; (1 1/2 cups)
Seeded and chopped
1/2 c Chopped red onion
2/3 c Cider vinegar
1/2 c Olive oil
1/3 c Chopped fresh parsley
1/4 c Peeled and grated fresh gingerroot
1 1/2 ts Dijon mustard
Salt and freshly ground black pepper; to taste

INSTRUCTIONS

GINGER DRESSING
Not only does this dish taste great but it looks pretty as well. The fresh
ginger dressing goes nicely with the nutty flavor of wild rice and adds a
new twist to this dish.
Bring large saucepan of water to a boil. Add wild rice and cook until
tender, about 50 minutes. Drain; transfer rice to large mixing bowl.
Meanwhile, bring a large saucepan of water to a boil. Add green beans and
boil until bright green and just tender, about 1 minute. With slotted
spoon, scoop out beans and drain in colander. Return water to a boil and
add orzo. Cook until tender, about 10 minutes. Drain well. Add green beans,
orzo, bell peppers and onion to rice in bowl and mix gently.
Dressing: In food processor or blender, combine all ingredients and process
until well-blended. Pour dressing over rice mixture and toss to coat. Serve
at room temperature.
