Winter Potato Salad

INGREDIENTS

4 lg Potatoes, boiled whole
8 Stalks celery w/ leaves, sliced
4 Garlic cloves, chopped
1 ts Oregano
Salt/pepper
Olive oil
ds Wine vinegar

INSTRUCTIONS

Scrub potatoes; place in pot with enough water to cover; boil about 25
minutes until potatoes are cooked but firm. Cool slightly; peel skin when
warm enough to handle; cut potatoes into medium-sized wedges. Toss potatoes
with celery, garlic, oregano, salt, pepper, and enough olive oil to
moisten. Splash with wine vinegar. Let set covered for 15-20 minutes. Serve
slightly warm or at room temperature.
