Yellow Squash Casserole

INGREDIENTS

2 lb Fresh; yellow squash
2 tb Butter or margarine
1 sm Onion; chopped fine
1 sm Bell pepper; chop fine
1 Egg
1 c Cheese crackers; crushed (up to)
4 sl Bacon
1/2 ts Salt (to taste)
Red pepper to taste

INSTRUCTIONS

Scrub squash and cut in rings. Melt butter or margarine, add seasoning and
squash and salt. Cook until tender, about 10 minutes. Add half the crackers
and beaten egg. Place in buttered casserole. Top with bacon slices and rest
of cracker crumbs. Bake at 350 degrees for 20 to 25 minutes, or until bacon
is done.
