Peach Chutney — a British Version

INGREDIENTS

2 md Yellow onions, chopped
4 Ripe peaches, chopped
2 tb Lemon juice
1/4 ts Allpice
1/2 ts White pepper
1/2 c Champagne vinegar
4 tb Light brown sugar
1/4 c Zant. currants

INSTRUCTIONS

GENERAL INSTRUCTIONS: Combine all ingredients in a stainless steel pot.
Bring to a boil uncovered. Then lower to a simmer and cover for for the
remaining cooking time: about 1 hour. The mixture should be thick like a
good finished jam or marmalade.
