Potatoes with Salmoriglio Sauce

INGREDIENTS

2 lb Small red new potatoes, scrubbed
3 tb Olive oil
2 tb Lemon juice
1 lg Clove garlic, peeled and forced through a press
1/2 ts Salt
1/4 ts Freshly ground black pepper to taste
2 tb Minced fresh oregano or 1 ts dried oregano crushed

INSTRUCTIONS

Cut the potatoes in halves and place in a steamer basket. Steam in a
covered pan with water at a low boil. Steam about 20 minutes, until the
potatoes are tender. Drain and transfer to a bowl.
While the potatoes are cooking combine the olive oil, lemon juice, garlic,
salt, pepper, and oregano in a small jar.
Pour the sauce over the potatoes and stir well to coat. Let sit 5 minutes
and serve.
Menu suggestion: Serve this side-dish with baked chicken or a simply
