Classic Bean Soup

INGREDIENTS

1/4 c Vegetable oil
1/2 c Chopped red onion
4 Sliced carrots
1 cn Spicy pinto beans
2 cn Black beans
2 cn Chicken broth
2 Cooked chicken breasts
2 ts Cumin
Salt & black pepper
Salsa & cheddar cheese

INSTRUCTIONS

In large pot heat oil on medium high. Add & saute onions & carrot
until tender. Add pinto & black beans. Stir well. Add broth & cumin.
Stir. Chop chicken into chunks & add to pot. Simmer 10 minutes.
Season with salt & black pepper. Serve hot in bowls topped with salsa
& grated cheese.
Approximately 5-12 minutes.
