Granola Stuffed with Lemon Breakfast Cream

INGREDIENTS

1 md Fresh pear
1/4 c Low-fat granola
1/2 ts Peanut butter
1/8 ts Nutmeg
1/8 ts Cinnamon
1 ts Brown sugar (or equivalent sugar substitute)
1 ts Raisins
2 tb Lemon Breakfast Cream (see below)
1 Fat

INSTRUCTIONS

Slice top off pear. With spoon, scoop out pulp, discarding seeds. Leave a
1/2 inch edge around pear shell. Set aside.
In small bowl, mix pulp with granola, peanut butter, spices, raisins and
brown sugar. Fill pear with granola mixture. Place bottom side down in
small, shallow baking dish and fill with 1-inch of water. Bake at 400
degrees for 10 minutes. Top with Lemon Breakfast Cream Yield:Makes 1

Per Serving: 264 Cal; 5 g Fat; 5 g Protein, 50 g Carbohydrate; 5 g Fiber;
96 mg Sodium, 18 mg Cholesterol. Dietary Exchanges: 2 Fruit; 1 Bread;
