Low-country Barbecue Sauce

INGREDIENTS

2 c Chopped tomatoes
1 Onion, finely chopped
1/4 c Butter or margarine, melted
1/4 c White vinegar
1 T Sugar
1 T Paprika
1 T Pepper
2 t Salt
1 1/2 t Worcestershire sauce
1/4 t Hot sauce
1 Clove garlic
1/2 Red pepper pod

INSTRUCTIONS

Process tomatoes through a food mill or pulse several times in a food
processor. Saute' onion in butter in a medium saucepan until tender.
Stir in tomatoes, vinegar, and remaining ingredients; bring to a  boil.
Reduce heat, and simmer sauce, uncovered, 15 minutes, stirring
occasionally. Remove and discard garlic and red pepper pod. Serve
sauce over sliced pork.  Makes 2 cups. Scanned & Proofed by Gene
