Mexican Meatloaf

INGREDIENTS

2 lb Ground beef
2 Eggs
1 c Fresh bread crumbs; * see note
1 cn (4 oz) taco sauce
1 md Onion; chopped
1 Clove garlic; crushed
1 tb Chili powder
1 1/2 ts Salt
1/4 ts Pepper
3/4 ts Cumin; (opt) -Filling—
1 cn (16 oz) refried beans; heated
1 cn (4 oz ) green chiles; chopped
1 c Cheddar cheese; shredded
1 c Tortilla chips; crushed, for topping -Toppings for meatloaf— -Use one or all—
Shredded lettuce; optional
Cheese; optional
Onion; chopped, optional
Green onion; chopped, optional
Green pepper; chopped, optional
Tomatoes; chopped, optional
Ripe olives; sliced, optional
Sour cream; optional

INSTRUCTIONS

* Instead of fresh bread crumbs, you can just tear the bread into pieces. (
I use the fresh bread crumbs).
Mix all the meatloaf ingredients together in a blender or food processor
(except ground beef). Make sure everything is blended well. Add ground
beef. Roll beef mixture out between two layers of waxed paper.
Remove the waxed paper from top of meat mixture and spread on the filling,
starting with the heated refried beans, then the chilies, and then top off
with the 1 cup of cheddar cheese.
Roll meat up jelly roll fashion. Put in a pan and top with the 1 cup of
crushed Tortilla chips.
Put in a preheated 375~ for about 60 minutes.
Let stand 15 minutes before removing from pan.
To serve: Have one or all of the following on hand to put on top of the
meatloaf. Shredded lettuce, cheese, chopped onion, chopped green onion,
chopped green pepper, chopped tomatoes, sliced ripe olives and sour cream.
We just have all these on the table and everyone can just help themselves
to which topping they want to use if any on their meatloaf. This is very
good.
Source: I think my mother got this from the Detroit Newspaper, but it has
been so long ago I really don't know but it is definitely a TNT recipe.
