Passover Mandel Bread

INGREDIENTS

5 Eggs
1 3/4 c Sugar
1 c Oil
1 c Walnuts, finely chopped
1 tb Vanilla or almond extract
3 c Cake meal
1 c Mini chocolate chips
Cinnamon sugar

INSTRUCTIONS

(from my friend, Maddie, who doesn't know where she got it from)
Beat eggs, sugar, oil, and pinch of salt. Add cake meal, nuts, chips, and
extract. Shape into 2 long rolls and sprinkle with cinnamon sugar. Bake on
greased and floured cookie sheet at 350F for 20 minutes. Cut 1/2 inch
slices while warm, stand on end* and bake 15 - 20 minutes more.
*original recipe says to lay slices on their sides and bake one side then
turn them over and bake the other. Either method works fine.
