Peanut Brittle

INGREDIENTS

1 c Sugar
1 c Karo white; (clear) syrup
2 tb Margarine plus some for greasing pan
1 ts Baking soda
12 oz Peanuts; or mixed nuts, macadamias, whatever

INSTRUCTIONS

Grease a cookie sheet with some margarine. Measure baking soda and have
ready. Combine sugar, syrup and margarine in saucepan. Cook on high heat,
stirring all the time. When ingredients are melted, add nuts. It will foam
up. Continue to stir and cook until the color of the mixture is close to
the color of peanut butter(this will only take a few minutes, but the time
will vary according to how hot your stove is). Watch carefully as it can go
from the right consistency to burnt very easily. Immediately take off heat
and add the baking soda. Pour out onto prepared pan and pat out, being
careful not to burn yourself, into a 1/4 to 1/2 inch thickness. When cool,
break in to pieces. Enjoy!
