INGREDIENTS

4 md Potatoes; peeled and shredded
1 sm Onion; finely grated
2 Eggs
2 tb Flour
1/2 ts Baking Powder
1/2 ts Salt
1/4 ts Pepper
Vegetable Oil
Applesauce
Sour Cream

INSTRUCTIONS

Soak potatoes in ice water. Squeeze dry. Combine potatoes and onion in a
large bowl. Mix in eggs, flour, baking powder and seasonings. Drop by 2 tb
into lightly oiled, hot skillet, spreading to flatten into discs with tines
of a fork. Cook until golden on both sides. Drain on paper towels. Serve
with applesauce and sour cream.
