INGREDIENTS

1 1/2 c Bean flour
1 1/2 c Rice flour
1 1/2 ts Salt
1 ts Ground cinnamon
1 ts Nutmeg
2 ts Baking soda
3 ts Xanthan gum
2 c Pureed cooked or canned pumpkin
1 c Honey
1 c Corn oil
1/2 c Water
4 Eggs

These recipes are a sample of what is available in "Going Against the
Grain", a great source for recipes for those who cannot eat
wheat/dairy/sugar
Grease and flour 2 loaf pans.  Stir together flour, sugar, baking soda,
salt and spices.  Stir together pumpkin, corn oil and water, add eggs one
at a time. Make a well in center of flour mixture, add pumpkin mixture and
stir. Pour into prepared pans and bake for 1 hour at 325F.
