Quick Cheesy Grits

INGREDIENTS

2 3/4 c Water
Salt to taste
3/4 c Hominy grits
1 Garlic clove
1/4 lb Cheddar cheese,; shredded
1 tb Unsalted butter
Freshly ground black pepper to taste

INSTRUCTIONS

In a medium saucepan with the water boiling, add the salt. Slowly stir in
the grits. Reduce the heat and cook until grits become very thick. Remove
grits from the heat and let sit. On a cutting board, mash the garlic cloves
using the flat side of a large knife. Shred the cheese, using oil on the
grater to keep from sticking. Into the saucepan with grits, mix the garlic
butter, cheese and pepper. Stir until combine and until the cheese has
melted. Serve to taste and serve. Approximately 7 minutes.
