Rice And Black Beans

INGREDIENTS

1 ts Olive oil
1/2 Red onion; diced
2 Cloves garlic; minced
1 c Chicken stock; fat-free/low salt
1 1/2 c Tomato sauce
1 c Long-grain brown rice; uncooked
1/2 c Black beans; drained and rinsed
1/2 ts Cumin
1/2 ts Creole seasoning

INSTRUCTIONS

1. Spray saucepan with cooking spray; add olive oil and heat. Add diced
onions and saute. Add chicken stock and tomato sauce. When boiling, add
rice. Simmer for 1 min; then cover and steam until done, about 40 to 45
min.
2. Combine black beans with cumin and seasoning. Microwave 1-1/2 min. on
high. Using a large slotted spoon, smash beans until half are mush. Combine
with hot, cooked rice.
