Roasting Garlic

INSTRUCTIONS

Here are three ways to roast garlic, all calling for the same ingredients.
If you have a garlic roaster, follow the same steps for slicing the garlic
and adding oil.
1. Heat oven to 350 degrees. Peel most of the paper outer skin from a whole
head of garlic. Baste head with 2 teaspoons of olive oil or melted butter.
Wrap garlic in foil,poke holes in foil with a knife, and bake garlic 1
1/2-2 hours on small baking sheet, pie pan, cake pan or oven rack, until
the garlic is tender. To test, using an oven mitt, squeeze garlic gently.
Or use tongs.
2. Prepare garlic as in method 1. Do not wrap in foil. Microwave on high
(100% power) 1 1/2-2 minutes, or until soft.
3. Heat oven to 400 degrees. Slice an unpeeled head of garlic in half
horizontally. Place on sheet of foil, cut side up. Drizzle olive oil over
garlic, then wrap each half in foil, cutting vents in foil to let steam
escape. Bake 45 minutes until garlic is tender.
To serve roasted garlic, use a serrated knife to slice off the top, so each
clove is opened. The garlic should be soft enough to spread easily.Don't be
shy. Slather it on bread. Use it in pasta and on pizza, in sauces and
mashed potatoes.
