INGREDIENTS

2 tb Bacon fat; margarine or butter
6 md Potatoes; thinly sliced
2 md Onions; sliced
1 1/2 ts Salt
1/4 ts Pepper
1/4 c Snipped parsley
3/4 c Water

INSTRUCTIONS

Heat bacon fat, margarine or butter in 10 inch skillet until hot. Layer
half the potato and onion slices in skillet. Sprinkle with half the salt,
pepper and parsley. Repeat. Add water. Cover and simmer over low heat until
potatoes are tender and liquid is absorbed, about 30 minutes. (Add water if
necessary.) Makes 6 servings.
