Smoked Chicken And Apricot Salad

INGREDIENTS

1 lg Smoked chicken; broken up
Lettuce leaves
6 Green onions; sliced diagonally
1 125 gram long bean sprouts
2 Stalks celery; sliced diagonally
2 tb Finely chopped parsley
2 tb Finely chopped chives
1/4 c Vinaigrette dressing
300 g Fresh apricots; halved and deseeded
2 tb Slivered almonds; toasted

INSTRUCTIONS

1. Arrange lettuce leaves on serving platter.
2. Combine green onions, bean sprouts, celery, parsley and chives in a
bowl. Pour over the dressing and toss to coat.
3. Place salad in a pile into the centre of the platter. Arrange apricots
and chicken on the outside. Sprinkle over the almonds.
