Spicy Apple-Oatmeal Bars

INGREDIENTS

3/4 c All-purpose flour; sifted
3/4 ts Baking powder
1/2 ts Baking soda
1/2 ts Cocoa
1 ts Ground cinnamon
1/2 ts Ground nutmeg
1/4 ts Ground cloves
1/3 c Shortening
3/4 c Granulated sugar
2 Egg
1 c Rolled oats
1 1/2 c Apple; peeled and diced
1/2 c Walnuts; coarsely chopped
Confectioner's sugar; for decoration

INSTRUCTIONS

Preheat oven to 375 degrees F. Lightly grease a 9-by-9-1-3/4-inch baking
pan. Sift flour with baking powder, soda, salt, cocoa, cinnamon, nutmeg,
and cloves; set aside. In a large bowl of electric mixer, beat shortening
with granulated sugar until light and fluffy. Beat in eggs, one at a time,
beating until very light and fluffy. At low speed, beat in flour mixture
just until combined. Then, with spoon, stir in oats, apple and the chopped
walnuts. Turn mixture into prepared pan. Bake 25 minutes, or until test
done. Let cool completely on wire rack. Sprinkle with confectioner's sugar.
