Spicy Chicken Sate with Peanut Sauce

INGREDIENTS

1 lb Chicken breast; skinless, boneless
2 tb Canola oil
3 Cloves garlic; minced
1 ts Lime peel; finely shredded
2 tb Lime juice
1 tb Curry powder
1 ts Sugar
1 ts Soy sauce
3/4 ts Ground red pepper
Peanut sauce

INSTRUCTIONS

Soak 8 bamboo skewers in hot water 1-3 hours. Rinse chicken and pat dry.
Cut lengthwise in strips. For marinade combine remaining ingredients,
except peanut sauce, in a plastic bag. Add chicken. Seal bag and marinate
in refrigerator 2 hours. Drain chicken, discarding marinade. Loosely thread
chicken strips accordion-style onto skewers. Grill directly over medium hot
coals 5-7 minutes or till chicken is tender and no longer pink. Serve with
peanut sauce. Serves 4.
