Sweet Potato and Pineapple Pie

INGREDIENTS

4 c Well-drained pineapple; 1/4" dice
2 c Sweet potato; well mashed
1/2 c Dark brown sugar
1 1/2 c Milk or half and half
3 Eggs
1/2 c Pineapple juice
1 ts Cinnamon
1/2 ts Mace
1 Nine-inch pre-baked pie shell

INSTRUCTIONS

Preheat oven to 350 degrees. ln a mixing bowl, mix the pineapple and sweet
potato with the sugar. Mix the milk with the egg, then add the remaining
ingredients and mix until smooth. Pour into pie shell and bake for 25
minutes until set.
