Sweet-soy Dipping Sauce

INGREDIENTS

1/4 c Mirin
3/4 c Defatted chicken or fish
stock
1/4 c Dark soy sauce
2 T Finely slivered ginger
2 T Finely slivered lemon zest
2 t Sugar, or to taste

INSTRUCTIONS

Combine all ingredients and stir to dissolve sugar. Allow to sit for
at least 2 hours for flavors to develop. Store covered in  refrigerator
