Swiss-chicken Bake

INGREDIENTS

4 Chicken breasts, skinned and
deboned if you prefer
1 c Uncooked rice
1 Chicken broth, you can also
use 1/2 packet onion soup
mix
1 c Water
1 c V-8 juice
1/2 Diced green pepper
1 Onion diced
Salt and pepper
3/4 c Swiss cheese, grated

INSTRUCTIONS

In buttered casserole dish, place raw rice. On top of rice, place
chicken breasts and sprinkle with salt and pepper. Sprinkle onion and
green pepper on top. Pour chicken broth, hot water, and V-8 over top.
Sprinkle cheese on top. Bake at 350F uncovered for an hour, then
uncover and bake for another 15 minutes. This is just easy comfort
