Tangy Ginger Dressing

| 1/4 | c | Chopped peeled fresh ginger |
| 1/4 | c | Chopped onion |
| 1/4 | c | Chopped celery |
| 1/4 | c | Water |
| 3 | tb | White vinegar |
| 3 | tb | Vegetable oil |
| 2 | tb | Lemon peel, finely chopped |
| 2 | tb | Tomato paste |
| 1/2 | ts | Sugar |
INSTRUCTIONS
Combine all ingredients in blender. Blend on high until smooth, about 2 minutes. Season dressing to taste with salt and pepper.
