Wilted Lettuce Salad

INGREDIENTS

1 Head of leaf lettuce
1/2 lb Bacon
3/4 c Chopped onion
1/2 c Salad oil
1 c Cider vinegar
1/4 c Brown sugar
1 ts Salt
A pinch of black pepper
1 Hard-boiled egg

INSTRUCTIONS

Rinse the lettuce, pat dry and tear bite-sized pieces into a large salad
bowl. Set aside. Chop the bacon into half-inch dice and fry in a skillet
until crisp. Remove the bacon pieces and drain on paper toweling. Add the
chopped onion to the bacon drippings in the skillet and cook until just
golden-brown. Add the oil, vinegar, sugar, salt and pepper and let simmer
uncovered for 10 minutes, stirring occasionally.
While the dressing is simmering, toss the bacon pieces with the lettuce.
Mince the egg and set aside. When the dressing is ready, pour the hot
concoction on the lettuce and toss to coat thoroughly. Sprinkle the minced
egg over the top and serve immediately.
Serves four.
